We strongly believe that excellent non-alcoholic wines can only be made from excellent alcoholic wines. Only the finest Austrian quality wines, rich in flavors with an outstanding body are the foundation for ZERONIMO. We focus on varietals that are  full of character and only use grapes from old vineyards (70+ years) that ensure density, complex authenticity and minerality.

ZERONIMO started with a soul’s desire, making complex, rich, pure old world style wine flavors and the fascinating world of wine with infinite possibilities accessible to everyone.

The secret to preserving authentic noble aromas

ZERONIMO offers premium alcohol-removed wines that are raising industry standards and embracing innovative dealcoholizing technology. To preserve the authentic noble aromas of the wine, we leveraged a highly aromatic dealcoholization process using vacuum distillation and a patented aroma recovery method.

Vacuum Distillation

With vacuum distillation, this fine wine is put in a vacuum environment where physics allows the alcohol to “boil off” at a remarkably low temperature of 27 degrees Celsius or 80 degrees Fahrenheit.

Aroma Recovery

This part involves extracting the flavors and aromas from the removed alcohol portion and then adding back these components into the dealcoholized wine. The innovative and patented methodology used takes 3-4 days.

Austria is especially known for making world class wines from Blaufrankisch and Gruner Veltliner. It reflects a long history and rich culture of winemaking, deeply embedded in Austria’s identity, traditions, and cuisine.
